It has a classical base but modern and contemporary presentation. Where only a kitchen with fresh seasonal products work. The regional products at Eric highest priority. Some examples: asparagus from Absdale, lambs from Graauw, game from their own environment and of course the fish from the Oosterschelde estuary of the Oosterschelde as hit only a few months per year may be caught.
