A long established restaurant on the heights of Barvaux. The Cor de Chasse has undergone a spectacular revival in the hands of a highly efficient young couple who have been sympathetic to its history. Aurore and Mario Elias learned the business in large restaurants in the Ardennes and are now making the most of this experience in their well-established, rural restaurant. Decorated nicely in a simple style, the Cor de Chasse has ten or so rooms for gourmets staying the weekend. Situated within a large luxuriant garden, the Cor de Chasse is situated in an attractive setting. That said, the most important thing is the food and this really is a discovery. The outstanding service and the irreproachable and highly enjoyable wines add to your experience as you embark on a pleasant journey through a short menu that is oriented towards produce in season. Mario Elias is certainly very talented. Every dish is enhanced with an often unexpected personal touch, never pointless nor gratuitous. Influences from elsewhere – from the east and from southern Europe – are appreciated, but this is not to forget regional influences, with all these influences blending together in a subtle synthesis of taste. The highly complex dishes are all the result of elaborate planning, with them all preserving their underlying virtues: they are deliciously faithful to the produce. The food is beautifully presented and smells irresistable. The young chef seems to be at ease in every sphere, including in creating truly seductive desserts.
